I've spent the last eight years buying HVAC and refrigeration equipment for a company that supplies commercial kitchens and mechanical contractors. Our annual budget runs about $1.8 million, and I track every quote, invoice, and energy-use estimate in a total cost of ownership spreadsheet. When I first started, I assumed the most efficient product was always the right one. That's not how it works.
The right choice depends on the job you're trying to do. If you need year-round comfort in a building with ductwork, a Bosch IDS Ultra heat pump might be the answer. If you need ice for a bar, you need an ice machine. If you need temporary heat in an unheated warehouse, a properly vented diesel heater can make sense. If you're storing frozen food and losing quality, you need to solve freezer burn long before you buy new equipment.

I recommend looking at the Bosch IDS Ultra heat pump when a building already has ductwork and the owner wants to replace an aging furnace or air conditioner. It's an inverter-driven split system, and when it's matched with the correct indoor unit, it can reach 20 SEER. That's where the 'Bosch 20 SEER heat pump' comes from. That number doesn't exist in isolation. Change the air handler or coil and the rating changes.
Ask your contractor for the AHRI matched-system reference. I do not mean the spec sheet that says 'up to 20 SEER.' I mean the exact AHRI number for the outdoor and indoor units being proposed. I've seen more than one quote fall apart when we checked the matched-system rating.
That said, a 20 SEER heat pump isn't always worth the premium. To be fair, if a building is used a few days a week, the energy savings might take too long to pay back the added upfront cost. In my experience, the Bosch IDS Ultra is a good fit for facilities with consistent occupancy and a real cooling and heating load. It can also be a strong option in colder climates because of the inverter compressor, but you still need a proper load calculation. If the building needs backup heat below a certain outdoor temperature, that's not a failure of the heat pump—it's a reality of physics.
Where I would not recommend it: a building with no ductwork, or a project where the budget can't handle the required electrical work. In those cases, a ductless system or even a high-efficiency boiler might serve you better. The Bosch unit is excellent, but it's not every building's answer.
For commercial kitchens, bars, hotels, and healthcare facilities, an ice machine is a production tool, not a storage box. If you put hot liquids in a regular freezer, you're going to wait hours for ice and then end up with substandard cubes. Buy a purpose-built machine.
When I compared quotes for a client's undercounter ice machine in 2023, the lowest upfront price was about $900 less than the next option. But it used more water and more electricity per batch. Over a five-year ownership period, the operating cost erased the savings. I went back and forth between air-cooled and water-cooled models because the kitchen was warm and ventilation was marginal. Air-cooled made more sense for the local water rates; water-cooled would have been fine if we had abundant water and too much heat in the area.
Look for an Energy Star certified ice machine when possible. The Energy Star product listings give estimated annual energy use, and I've seen differences of 20 percent or more between similar models. Also, ask about the bin. A machine that produces 500 pounds of ice per day doesn't help if the bin only holds 100 pounds and your staff uses ice faster than it drops.
If you run a small coffee shop and only need a couple of buckets a day, a large modular ice machine is overkill. A standard undercounter unit will do. But if you're running a full-service restaurant, get modular equipment with a separate storage bin. The right machine for your volume is the one that keeps up at your peak hour—not the one with the biggest number on the label.
I get why diesel heaters are popular. They're portable, they run on fuel you might already have, and the upfront cost can be low. But from a procurement perspective, the real cost is in installation, venting, noise, and maintenance.
A diesel heater is probably the right call for an unheated construction site, a detached garage, or a temporary workspace where electric service isn't practical. For those jobs, a forced-air diesel heater can deliver a lot of heat quickly. The key is to install it correctly. NFPA 31 covers oil-fired heating equipment, and any diesel heater used indoors should be vented to the outside. I also recommend a carbon monoxide detector in the same space. That's not a luxury; that's a safety requirement.
Looking back, I should have insisted on a vented installation for a client's equipment storage building in 2022. At the time, the client wanted to save labor, and the unvented heater seemed fine because the bay doors were often open. Then a week of cold, closed-up weather created condensation and exhaust odor. The fix cost more than the heater saved.
So my recommendation is conditional. If you need permanent heat for a workshop and have access to electricity, a heat pump or electric heater is likely cheaper over time. If you need temporary heat on sites with no power, choose a diesel heater with a proper vent kit and a real installation. Don't buy the cheapest unit and assume it's fine. In the long run, you're paying for reliability and safety, not just BTUs.
Freezer burn is one of those terms that gets thrown around, but the cause is simple: air reaches the surface of food and dries it out. The USDA states that freezer burn does not make food unsafe. It's a quality issue. For a restaurant or meal-prep operation, that quality issue is real money.

If you already have a functional freezer, buy packaging supplies and train your staff before you buy a new unit. If you don't have a functional freezer, then yes, that's a different purchase decision. But don't expect a new freezer to fix a workflow issue.
